This past year I’ve made the conscious effort to be mindful of the ingredients I am putting in my body and that includes my sweet treats.
These oat bites are great to satisfy a sweet tooth and you most likely already have these ingredients lying around. I tend to make a big batch and store them in the freezer for later. One of the best parts about these is that they are simple and take less than 10 mins to make. I’ve made these in a few different variations adding or swapping different ingredients but have found this to be my favorite combo. Download a PDF version here!

Healthy Gf + Vegan Oat Bars
Total Time: 25 minutes
Serves: 6
Prep Time: 10 mins
Cook Time: 30 mins
Total Time: 40 mins
Ingredients:
+1 cup Rolled Oats
+1 cup Flour (the gluten free brand I use)
+2 Bananas
+1 Egg
+1 teaspoon Baking powder
+ 1 teaspoon Vanilla extract
+ 1 cup Chocolate chips (my favorite dairy free brand)
+ 1/2 teaspoon Cinnamon
+ 1/2 cup Pecans
+ a sprinkle of Chia seeds
+ 1/4 cup Maple syrup
The Process
1. Preheat oven to 425 degrees
2. In a bowl mash two bananas until a smooth consistency
3. In a separate bowl mix together the dry ingredients
(Oats, cinnamon, flour, chia seeds, baking powder, pecans)
4. Combine wet and dry ingredients, mix until forms chunky paste
(Bananas, yogurt, agave syrup, vanilla extract)
5. Fold in chocolate chips
7. Line baking sheet with parchment paper
Transfer to baking sheet
8. Place into the oven for 20-25 minutes
Once done let them cool for a few minutes or stick them in the fridge for faster hardening.
